Japanese Somen with Green Curry
Serving Japanese Somen with Green Curry or Yellow Curry to turn the simple noodles into a flavourful cold dish.
Cooking time: 20 minutes
Ingredients for 2 people
2 packs of Green Curry
2 pcs Eggplant
1 pc Red Bell Pepper
2 tablespoons Salad Oil
3-4 bunches Japanese Somen
Lime
2 pcs Eggplant

Cooking Instructions
1. Cut the eggplants and red bell pepper into chunks.
2. Heat the frying pan with salad oil.
3. Pan-fry the eggplants and red bell pepper until the oil is absorbed.
4. Add Green Curry into the frying pan.
5. Cook the Japanese Somen and then strain and rinse it in running cold water.
6. Serve the curry and noodles in different containers. Add sliced lime and finish.
